@Aamod Resort Dalhousie, Himachal Pradesh: Must Experience

Date: 23 June 2011

@Aamod Resort Dalhousie, Himachal Pradesh: Must Experience
We booked this place during out trip to Dharamshala and Dalhousie based on a reference when we were unable to find anything in Dalhousie. And let me say that we did not regret the decision at all. The stay was for 3 days and 2 nights and we will cherish the memories for years.

Its located about 6 kms away from Dalhousie bus stand on the way to Khajjiar. Set on a hill top it is surrounded by the Himalyan Mountains on one side and Deodar forest on the other.

There are cottages with the clay look and an ensemble of furniture and interiors that give you the English classic feel, the balconies overlooking the mountains. A recreational cum reading room, a beautifully designed indoor and outdoor dining area. Simple, comfortable and elegant. You can choose to eat outdoors enjoying the mountain breeze and the beautiful ranges, few of them snow caped.

We could sit for hours in our cottage balcony enjoying the mesmerizing view, soul quenching silence, reading our books. The only sound that one hears is that of a dog barking in a far away village or a car passing by on the hill road. To take a break from solace, walk down the road, or go to see Dalhousie market and Khajjiar.

Last but not the least take the early morning nature walk guided by the hotel staff. The food is amazingly delicious, quite a luxury to find good food in the hills. You can try butter chicken, dal fry, Chinese soups and dishes, exceeding expectations of a Delhiite. The service is excellent and the staff commendable. The hotel offers all the basic amenities with a great class.

                                          Cottage Rooms

                                         Balconies overlooking the hill-tops

                                          Forest View

                                         Recreation Area

There may be a little network problem in some areas of the hotel, but who cares as even a phone ringing is an intrusion to nature here. Staying here is like being close to self, being real and simple. We pledge to go again.

Home Made Risotto - For Vegetarians & Non Vegetarians

Inspired by Big Chill, Khan Market, its an easy to make recipe. I have practiced it for at least a 50 times and it has never ever failed me. It is your very own exotic 'khichdi'.

Success: 100%

Challenge: Developing a taste for it

Time: About 30 mins with no distractions

Serves: 3 normal human appetites

Magic Formula:

Risotto Rice: About 150 gms (you can get a box from a relatively better neighborhood grocery store)

Milk: 2.5 medium sized cups

Water/Chicken Stock: 2 medium sized cups

Yellow Butter: About 2 serving spoons

Spring/Normal Onion: Finely chopped one medium sized

Spinach/Boiled Minced Chicken: 200 gms finely chopped spinach or 200 gms slightly boiled minced chicken (save the chicken stock left from boiling the minced chicken - not mandatory though)

Garlic Paste: made out of 2 medium sized cloves

Seasoning: Salt to taste, white pepper, dried powder of parsley, basil and oregano (you get them in grocery stores)

Magic Wand: Non stick deep dish/pan and wooden spoons

Magic Touch:

Put the non stick deep dish on the burner. Add butter. Do not let the butter burn. Add garlic paste, finely chopped onions with finely chopped fresh spinach or minced chicken if you are carnivores. Put all together. Saute for 5 mins on medium flame.

Add risotto rice. Saute for about 3-4 mins. Add all of the seasoning. Add milk with water or the chicken stock. Mix well. Cover it and let it cook on medium heat until the rice is completely cooked.

The Risotto is not completely dried up. You could top it with Parmesan cheese.

Make sure: Have it hot and straight from the pan. Try giving it instead of 'khichdi' to the ill healths at home. They will shower their blessings and love on you.

Penne in Mushroom Cream Sauce

Inspired by Pizza Hut, the recipe is easy to make at home. I have been making this for the last 5 years and have shared it with all in family and peer group.

Success: 100%

Challenge: Zilch

Time: Not more than 15 minutes

Magic Formula:

Penne - 250 gms (you can substitute it with any other form of pasta)

Edible Cream - 400 gms

Yellow Butter - about 1 or 1.5 serving spoon

Garlic paste- made out of at least 8 medium sized cloves

Mushrooms - 200 gms
Salt to taste
Seasoning - white/black pepper, powdered oregano (save some from dominos home delivery if you don't stock it), powdered basil (not mandatory), fried crushed garlic (if you can, you get it in the market)

Magic Wand: Non-stick pan and wooden spoons

Magic touch:
Cut mushrooms like thin and long.
Boil the penne as you would do to make noodles or any other form of pasta with some salt. Don't let it go too soft, drain it and cool it.
Put the non-stick pan on the burner, medium heat.
Add butter, do not let it burn.
Add the cut mushrooms and garlic paste. Saute for a while; say for about 5 mins on slow heat.
Add the cooked penne. Add salt, pepper, oregano, basil and fried garlic, put all together.
Roll it, turn it.
Switch off the heat.
Add cream and once again roll it to cover the penne with cream.

Make sure: You eat it with buttered toast or garlic bread.
